Baking Bread



Hey, how good do these loaves of bread look?  Right, just stunning!  This is "no knead bread" that is baked in this cast iron pot.  The first picture is the first loaf that Kathy made and it looks just beautiful.  When we cut into it, however, it was pretty dense and had only small air spaces within.  So Kathy vowed to try again.  It turns out that the flour was too old.  Who knew that older flour would affect how the bread dough would rise.  So now we come to the second loaf.  Stunning, both inside and out! A great chewy crust and a much lighter inside, and absolutely delicious!  Here's to not giving up.

I never thought of baking bread in a pot. Would love to have Kathy share her recipe. This looks delicious.
